Does anyone know what exactly "tallow" is? Is it ONLY the fat, that comes
from a carcase? Are we allowed to feed it cows? I am pretty sure we are
not allowed to feed other offal to cows.

This question came up at the end of last year when the UDV was requested to
find a list of farmers who feed protein supplements for an DPIE/AQIS survey
to check if Australia was adhering to the ban on feeding ruminant protein to
ruminants. Note that stockfeed companies were also surveyed. This survey
was part of Australia preparing itself for the April audit by the EU on the
Australian meat and offal market.

Tallow is meant to be just fat from ruminants and is often used as part of
either pre-mixed supplements that are purchased from stock feed companies or
as a component farmers can mix in themselves. It is permissible because it
is fat and not protein. There is a ban on feeding ruminant protein to
ruminants in Australia, which is why you cannot feed offal, blood meal etc.
